Pumpkin Pecan Muffins

Pumpkin Pecan Muffins
 Ingredients:
  • 2 cups whole wheat flour 
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 (15 ounce) can solid-pack pumpkin
  • 1/2 teaspoon allspice
  • 1/2 to 1 cup pecans     
Directions:
  1. Preheat oven to 375°F.
  2. Mix flour, sugar, baking powder, baking soda, salt, cinnamon, allspice and nutmeg in a large bowl. 
    *~(Add chopped pecans to mixture, don't forget to save some for top. If some don't care for nuts you can either leave out or just top with pecan halfs on top for easy removal)~*

  3. Add pumpkin, ½ cup of water. Stir until just mixed. 
    (I only used the pecans for topping since my daughter doesn't care for them much.)
  4. Spoon batter into oil-sprayed muffin cups, filling to just below tops. Top with pecans.
     
  5. Bake 25 to 30 minutes, until tops of muffins bounce back when pressed lightly. Remove from oven and let stand 5 minutes. Remove muffins from pan and cool on a rack. Store cooled muffins in an airtight container.
  6. 6. Enjoy with some coffee!!!!
